Ingredients:
- 1/3 cup unsweetened almond milk
- 4 flax eggs 1/3 cup water and 4 tablespoon ground flax
- 1 teaspoon vanilla
- 2 cups quinoa cooked
- ¾ cups coconut oil
- ½ cup sugar
- 1 cup cocoa powder
- 1 ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt

- Preheat the oven to 350°F
In a bowl make your flax eggs and let them thicken. Combine with the almond milk and vanilla.
Cook your quinoa and then blend until smooth with the coconut oil.
- In a separate bowl combine the sugar, cocoa, baking powder, baking soda, and salt.
- Next combine the milk mixture with the quinoa mixture.
- Then add your wet ingredients into your dry ingredients.
- If you are making cupcakes bake for about 12 minutes or until a toothpick comes out clean; however, if you are making a cake bake for about 30 minutes or until a toothpick comes out clean.
