Vegan Burger Recipe

With this vegan burger recipe, we really get a chance to step out side the box and have even more fun with our food. When it comes to eating a whole food plant based diet, keeping it simple is a good rule for the long run. Sometime we all want to get creative and have fun with our food. Here is a great way to get some fun frills while also nourishing yourself at the same time.

These are probably the healthiest burgers I've ever made, I like to bake them because I make a big batch, but you could also pan fry them.

Ingredients

  • 1 can chickpeas
  • 1 bag spinach
  • 1 zucchini grated
  • 1 carrot grated
  • ½ teaspoon garlic powder
  • 1 cup ish Oats
  • salt and pepper
  • lettuce, tomatos, onions
  • whole wheat or gluten free bun

  1. Get a bowl for your chickpeas and mash them, this can be a rough mash. If you have a food processor or a blender you can use it too, your burgers may come out a little more green and crumbly if you are not careful.
  2. I like to sauté my spinach, zucchini, and carrots, but if you prefer them raw you can do that too.

  3. After you have your chickpeas mashed, add in the spinach, zucchini, and carrots; then mix with a bit of garlic powder, salt and pepper.

  4. Slowly add in your oats to your mix until it becomes a consistency that your can form into a patty and it holds it shape. Be careful, if you make it too dry they will be crumbly after you cook them. If this happens just add more water to your mix. You want it slightly tacky. 

  5. This is the time to taste your mix, add in any additional seasoning you’d like to make it more flavorful. Cook off a small patty to see how they come out to see if you need to add more water to your mix.
  6. Once you got your mix down, form into patties and bake or pan fry.

  7. If you decide to bake your burgers, line them on a sheet tray with foil and a little bit of oil and bake at 375°F for 30 minutes.

  8. If you decide to pan fry your burgers, get your pan nice and hot, put some oil down and lay your patty into the oil. Cook until golden.

  9. The last step is my favorite, building your burger. Load it up with some tomatoes and pickles and enjoy!

P.S. Recipe hack, if you don’t have chickpeas you can you any bean you have on hand. This recipe is good with black beans, cumin and cilantro.
